This crockpot copycat Benihana chicken soup is a homemade version of Benihana’s famous onion soup….with chicken. Cooking this Japanese inspired onion soup in the slow cooker makes this recipe incredibly easy. Ingredients For Crockpot Copycat Benihana Chicken Soup
- Chicken Breasts
- Mushrooms
- Carrots
- Celery
- Onion
- Garlic
- Fried Onions
- Green Onions
- Chicken Broth
- Beef Broth
- Seasonings: salt, pepper, ginger
How To Make Crockpot Copycat Benihana Chicken Soup
Slow Cooker
- Add the chicken, broth, onion, carrot, celery, garlic, salt, ginger, and pepper to the slow cooker. Stir to mix well.
- Cook HIGH for 2-3 hours or LOW 4-6.
- Strain out the veggies so only broth and chicken are left in the slow cooker.
- To serve, add 2 tablespoons of the sliced mushrooms to a bowl. Ladle about 1 cup of broth into the bowl. Garnish with a few pieces of the fried onions and green onions.

What type of chicken should you use?
The recipe is meant to use uncooked chicken breasts but chicken thighs are another good option. If you have leftover cooked chicken, you can use that as well.
Do you have to use meat?
Of course not. Omit the meat for a meatless, vegetarian soup. Omit the meat and use vegetable broth to make this a vegan soup.
